This fresh, creamy dish is the perfect keto sidekick to barbecue or Indian Chicken Burgers. The recipe hails from the cookbook Keto BBQ, in which its authors say, “If you think cucumber isn’t your thing, you need to try it in this salad. With a slightly tangy sour cream base and the addition of white onion and fresh dill, it’s perfect in its simplicity. If you have a little feta or goat cheese in the refrigerator, try crumbling some on top.” [Excerpted from Keto BBQ by Faith Gorsky and Lara Clevenger, MSH, RDN, CPT. Kind of wary on any cucumber salad recipes, but this one is an instant hit. All of the correct amount of ingredients listed make this a super easy dish to prepare. Yes, use English cucumbers. They are in the most Giant, Harris Teeter stores- right next to the American cucumbers. I used a handheld slicer to get the cucumbers and onions real slim. Makes the sauce so much easier to absorb into the cucumbers. Going to try red onions next time. Great starter recipe to modify as you go along.
Thanks, Shawn. Let us know what variations you come up with.
I’ve tried lots of cucumber/sour cream recipes before, but this one was SO YUMMY!! I only had red wine vinegar & black pepper but the swaps worked great!
That makes us so happy!
I’ve made this recipe 3 times so far. I nestle a couple of spoonfuls in the middle of my salad. It’s absolutely delicious. It’s a recipe we ate when I was young and I had completely forgotten about it. I am happy you posted this recipe. It’s an excellent summertime dish.
