This fresh, creamy dish is the perfect keto sidekick to barbecue or Indian Chicken Burgers. The recipe hails from the cookbook Keto BBQ, in which its authors say, “If you think cucumber isn’t your thing, you need to try it in this salad. With a slightly tangy sour cream base and the addition of white onion and fresh dill, it’s perfect in its simplicity. If you have a little feta or goat cheese in the refrigerator, try crumbling some on top.” [Excerpted from Keto BBQ by Faith Gorsky and Lara Clevenger, MSH, RDN, CPT. I’ve made this recipe 3 times so far. I nestle a couple of spoonfuls in the middle of my salad. It’s absolutely delicious. It’s a recipe we ate when I was young and I had completely forgotten about it. I am happy you posted this recipe. It’s an excellent summertime dish.
