Creamy Cucumber Salad

This fresh, creamy dish is the perfect keto sidekick to barbecue or Indian Chicken Burgers. The recipe hails from the cookbook Keto BBQ, in which its authors say, “If you think cucumber isn’t your thing, you need to try it in this salad. With a slightly tangy sour cream base and the addition of white onion and fresh dill, it’s perfect in its simplicity. If you have a little feta or goat cheese in the refrigerator, try crumbling some on top.”

Ingredients

  • 2/3 cup full-fat sour cream
  • 1 Tbsp white wine vinegar
  • 1/2 tsp salt
  • 1/8 tsp ground white pepper
  • 1 medium English cucumber, thinly sliced
  • 1/2 small white onion, peeled and thinly sliced
  • 3 Tbsp chopped fresh dill

Instructions

  • In a large bowl, whisk together the sour cream, vinegar, salt, and pepper.
  • Stir in the remaining ingredients. Serve.
