Keto Waffles

Fluffy, nutty, crisp, and golden-delicious, these waffles have it all. The batter comes together easily in a blender and is superb when crisped to perfection and served with your favorite keto-friendly syrup (like Lakanto), a mound of whipped cream, and some fresh blueberries or blackberries (or fried chicken). Remember to adjust the macros when you make changes or additions. Waffles are best enjoyed right away. This recipe calls for a standard 4-slice grid waffle maker. If you have a Belgian-style (round) waffle maker, it’s fine to use it, but it tends to make larger waffles, so you’ll need to recalculate the macros and number of servings you can make.

Instructions

  • Preheat the oven to 200°F (95°C). Place a wire rack on a large, rimmed baking sheet.
  • Heat a 4-slice grid waffle maker on the high setting and lightly spray with non-stick cooking spray.
  • In a blender, combine the almond flour, sweetener, baking powder, cinnamon/nutmeg, salt, eggs, cream cheese, butter, and vanilla extract. Blend until mixed through and smooth, about 1 minute.
  • Pour the batter into the prepared waffle iron, making sure to cover the entire waffle plate, corners, and edges with batter. Close the lid and cook, checking every 3 minutes until they are deep golden-brown, 10 to 12 minutes. Set the finished waffles on the prepared wire rack and transfer it to the oven. Repeat with the remaining batter. Serve.

    I replaced the almond flour with bamboo flour and they turned out great. And it lowers the carb count. And no weird almond flour taste

    Not crisp.
    I liked making this recipe in a blender. The result is too sweet for me which can be remedied by using less sweetener. However, it is disappointing the waffles are not crisp. I wish there was a way to make almond flour crisp up. Soft does work for me.

  4. Can I use Stevia instead of the Erythritol? And how would that translate?

    • Hi Leah, You could try using stevia, but you would need only a tiny amount because it is much sweeter than erythritol. We now recommend granulated allulose as a substitute for erythritol in the same amount.

      I love crispy waffles, too, and did long before I heard of Keto. Because cooking them in a waffle iron for too long can dry them out or make them “rubbery”, I always pop my freshly baked waffles into the toaster for added crispiness, and that works great for these waffles too. If you freeze extras, wait to toast them and use the toaster to re-heat them. 🙂

    Turned out great. Used small electric waffle maker. Like others said they are soft not crispy but still delicious. I mashed up some black berries and raspberries on one for my son he loved it!!

    These were really tasty! I like crispy waffles but these were still really good. I used allspice instead of nutmeg or cinnamon because I’m a weirdo and it reminds me of Christmas.
