Keto Blue Cheese Vinaigrette

This creamy, delicious keto salad dressing is a surefire way to make your greens exciting and loaded with healthy macros. Toss it with your favorite salad greens, and include additions if you like; nuts, avocado, tomato, cooked chicken, pumpkin seeds, and sunflower seeds will all be delicious with this dressing. Just be sure to recalculate macros based on the salad ingredients you add. Bonus: the vinaigrette is also delicious with roasted asparagus!

Ingredients List

  • 1 oz blue (Roquefort) cheese crumbled, divided
  • 1 Tbsp champagne vinegar
  • 3 Tbsp extra-virgin olive oil
  • sea salt and freshly ground black pepper

  • In a bowl, whisk together the blue cheese and champagne vinegar. Slowly whisk in the olive oil until it’s emulsified. Season to taste with salt and pepper.
