- 1 oz blue (Roquefort) cheese crumbled, divided
- 1 Tbsp champagne vinegar
- 3 Tbsp extra-virgin olive oil
- sea salt and freshly ground black pepper
Instructions
- In a bowl, whisk together the blue cheese and champagne vinegar. Slowly whisk in the olive oil until it’s emulsified. Season to taste with salt and pepper.
