While a lot of people started baking during the pandemic, for West Knoxville Tennessee resident, Irum Mahmood, it became a full-fledged business.
Mahmood opened Inny’s Bake Shop, a keto-friendly bakery, in July 2020. By September, she had so many orders she had to move from her house into a commercial kitchen.
The idea came to her because she noticed a lack of options in Knoxville for people with dietary restrictions, particularly diabetes. She had already been baking low carb, low sugar and gluten-free foods for her diabetic mother, even adjusting old family recipes to make them safe for her mom.
