I’ve been looking for a way to bake with coconut flour, which smells and tastes so good, without the slimy mouth feel that comes with using psyllium for glue. I do appreciate the need for fiber in my keto diet, but I would personally rather drink it and get it over with, than have it ruin an otherwise pleasant pancake, bread, or cake.
I confess I haven’t made these yet; I hope to soon, and will update my comment. But I love the creative thinking here… using whipped egg whites to incorporate air into the wet mix, just like a classic Joy of Cooking cake. Hopefully the gluten won’t be missed, and no slimy xantham gum or psyllium either. Hooray!
Just a question or two. Try the recipe in the mini waffle maker to firm up the blinis. And maybe try psyllium husk for some fiber?
