Cauliflower Mac and Cheese

Delicious gooey, belly-warming mac & cheese is the perfect comfort food for both kids and adults. To spice things up, try adding shredded buffalo chicken on top!

Ingredients

  • 24 oz cauliflower florets, fresh or frozen
  • 2 cups cheddar cheese
  • 1/2 cup heavy cream
  • 1/4 cup water
  • 4 oz cream cheese
  • tsp ground mustard
  • 1 tsp garlic powder
  • 1/2 tsp parsley
  • 1/4 tsp pepper
  • 1/2 tsp salt (more or less based on preference)

Instructions

  • Place all ingredients into a crockpot and mix well. Cook on low for 3 hours stirring occasionally. 
  • Optional: put in a casserole dish and bake at 400°F (204°C) for 10 mins for a crispy top layer!
